Disclaimer and notes on choosing a class

The descriptions have been written by the course providers themselves, not by Campaign staff, and are only updated as and when they send updates to us.

As with everything on this site, a listing is simply that - it does not represent either an endorsement by, or recommendation from, Sustain or the Real Bread Campaign.

The Campaign recommends that before you book a place on any class you:

  • visit the class provider's website and/or contact them for fuller details of what you can expect.
  • check with the class provider that you have up to date information, as details might have changed since they were supplied to the Campaign.
  • make sure that the tutor has the depth of knowledge, level of skill and length of experience appropriate to meet your own needs and answer the questions you may have - e.g. if  you planning to set up a sourdough bakery, then your needs are quite different from someone wanting to bake a basic loaf at home every now and then.

In particular, we have to leave it to you to check the background of the tutor. Some on the list below have 20-30 years of professional baking and teaching experience, whilst others have considerably less.

Dodgshons Bakery Artisan Bread Class

The class is held at the bakery every last Sunday of the month. During the day you will learn how to make four doughs: a white dough producing a plain tin and a farmhouse loaf; a brown dough with honey producing a cob and two baguettes; a sweet dough producing Chelsea buns; and finally a sea salt and rosemary focaccia bread. You will leave at the end of the day with all that you have made along with a recipe and method booklet. Tips will be given throughout the day of how to get the best results at home, all the doughs you learn on the day are very versatile and our baker will give you lots of ideas to go home and try out for yourself. Natural Yeast Bread Making Class. Natural yeast what we call bread raised only with wild yeasts, which is also known as sourdough. The process is one of a long fermentation which helps the bread to have a lovely depth of flavour and some research suggests it also makes for a more digestible loaf. Our class lasts two hours and will comprise:

  • basic notions of what sourdough is, how to make it, maintain it and store it
  • teaching of how to make sourdough bread with hand kneading technique - every student will then be able to practice and take home with them the dough that they have made, proof it overnight and bake it in their oven at home in the morning
  • hand kneading and planetary mixers techniques
  • an instruction booklet collating all the information explained during the class and the bread recipe

Green Cottages Kitchen offers a variety of bread making courses that are fun and interactive, whatever your ability or skill get ready to bake! The course will provide you with recipes, skills and most importantly inspiration and confidence to bake at home. We keep our groups small (max 6). Our beautifully designed kitchen looks out onto a lovely Kentish garden.  The large central kitchen island means everyone can see what's going on and get involved. Courses start at 9.30/10am. Monique will provide some background and essential knowledge. You'll be mixing, kneading proving, shaping and baking. A light lunch will be provided. If the weather is good you can take a breath of fresh air in the garden. Finish by 3.30/ 4pm.

Hornbeam Bakers' Collective

The Collective is formed by a group of bakers based in north east London and hosted by the Hornbeam Centre. The classes take place on Sunday from 11-4pm and are taught by our experienced bakers. The Sourdough Bread Making Experience

Quid pro dough

Due to funding issues, we've had to review our priorities and some things had to give.

Having received nothing for running this service for more than four years, we are now limiting new entries (and amendments) to baking schools that can offer discounts to Campaign supporters and/or offer people who take classes the option of signing up as a supporter at the same time.

Your discount scheme

  • We ask that you offer at least 10% off your standard rate for an individual Campaign supporter.
  • An alternative option is when a Campaign supporter books and pays for two places (i.e. brings a friend) in the same class, he/she gets a 15% discount off the total booking.
  • You can choose to add your own Ts & Cs, e.g. limit this to people paying in full in advance.

The two methods we suggest for ensuring the discounts are limited to Campaign supporters are that they quote their supporter number when they book, or we can publish your discount code in the password-protected supporters-only section of our website.

Helping our charity to recruit Campaign supporters

Something that has proved invaluable to our charity is baking schools signing up new Campaign supporters when they book and pay for a class. This can be done in two ways:

  • You give customers the option of joining the Campaign at no extra cost when they book and pay for a class.
  • You make a donation of £25 to the Campaign for each person who takes you up on the offer. How you build this amount into your pricing/business plan is up to you.

or...

  • You give your customers the option of joining the Campaign when they book a class/course.
  • You collect £25 from each person who chooses to do so.

In either case, please:

  • point would-be supporters to details of joining, including the benefits, here.
  • make regular (e.g. weekly or fortnightly) returns to the Campaign coordinator advising how many donations you are transferring; and the details of people who have chosen to join.
  • promote the scheme on your website, leaflets etc. and we will include details in your listing above.

We will advise you of our bank details for electronic transfer of funds and will send you an invoice.
