Disclaimer and notes on choosing a class

The descriptions have been written by the course providers themselves, not by Campaign staff, and are only updated as and when they send updates to us.

As with everything on this site, a listing is simply that - it does not represent either an endorsement by, or recommendation from, Sustain or the Real Bread Campaign.

The Campaign recommends that before you book a place on any class you:

  • visit the class provider's website and/or contact them for fuller details of what you can expect.
  • check with the class provider that you have up to date information, as details might have changed since they were supplied to the Campaign.
  • make sure that the tutor has the depth of knowledge, level of skill and length of experience appropriate to meet your own needs and answer the questions you may have - e.g. if  you planning to set up a sourdough bakery, then your needs are quite different from someone wanting to bake a basic loaf at home every now and then.

In particular, we have to leave it to you to check the background of the tutor. Some on the list below have 20-30 years of professional baking and teaching experience, whilst others have considerably less.

Virtuous Bread

London, various venues

Virtuous Bread dispels the myth that baking is scary, prone to failure, and hard to fit into a busy lifestyle.  Hands on classes range from four hours for a basic bread class or eight hours for a sourdough class. From time to time we also give four hour classes in seasonal and celebration bread such as hot cross buns, all souls day and epiphany bread, challah, brioche, or wedding bread!  In addition to tea, coffee, lunch, and chat you always have lots of bread to take home.

Virtuous Bread also runs the Bread Angel course which teaches people to set up and run their own business baking bread at home and supplying it in their local neighbourhood.  It is such a clear and important win win:  Bakers make money and build their local communities both spiritually and physically by making connections through good bread.  The Bread Angel course is three classes of four hours over three weeks during which you learn to bake different kinds of bread, to market and sell your bread, and to set up and run your business.

Organic bread making. Tracey has been teaching beginners and advanced bread making for many years and her style is incredibly convivial.  Her workshops run for 2½ hours and embrace the idea of using kitchen excesses and leftovers in the recipes.  The sessions are completely hands-on, interactive and upbeat and she’ll provide solutions for problems you may have experienced in the past, like dense loaves, exhaustion from kneading and rising issues! Recipes include divine beetroot and parsnip plaits, honey roasted pepper loaf, prosciutto wrapped pesto rolls, and seasonal specials.

Jo's Bread Making Courses

**10% discount for Campaign members when booking two places in a class.  Please quote membership number when booking**

Spetisbury, Dorset

After two years of supplying local residents with freshly baked bread at the Spetisbury Trading Post, Jo Edmond has taken to running very popular half-day bread making courses at Spetisbury Village Hall.

There's a basic bread course and an Italian bread course (with other cuisines in the pipeline); informal and fun (and, of course, very much 'hands on'), they run either side of lunch on Saturdays monthly and weekday classes are being trialled during 2013. Course fees are between £35 and £40 (depending on course content and day of course). This is definitely a 'cost effective' approach to bread making - with the emphasis on fun, good food (lunch is included in the price!) and friendship.  Classes book up very quickly...

She has been baking bread and other Italian oven delicacies for more than 20 years, a tribute to her life long love affair with the warm, complex aroma of a fresh-baked loaf.

The focus of Ottavia’s baking classes is on bread and oven products from a range of Italian regions, from hand stretched grissini Torinesi to Pugliese and Toscano breads, from Genovese Torta Pasqualina to pizza Napoletana  and cantuccini with almonds.  A skilled and patient teacher, Ottavia will clearly illustrate various techniques specific to different types of bread guiding you through the tricky bits, and also tell you about the history and cultural aspects associated with baking in Italy.  Festive Italian baking classes are available before the main holidays of Christmas and Easter to conjure up a flavour of la dolce vita for your home. Ottavia teaches her classes from the kitchen of the beautiful and atmospheric barn of Jamie's Farm, near Ditteridge. Adding your Real Bread class

If you run regular or frequent classes or courses in Britain to teach people how to make what WE CALL Real Bread, we are happy to offer you a FREE listing on this page.

NB - Please see our new listing requirement in the quid pro dough section below.

To add a listing

Please email the outline of your regular/frequent Real Bread classes/courses:

  • in 100 words or fewer
  • without specific dates
  • noting if you offer any classes/courses for professional bakers
  • details of your Campaign member discount or recruitment scheme - see the quid pro dough section below.
  • IN THE SAME FORMAT AS THOSE ABOVE, please! We need to be able to simply cut and paste the text in here.

The email address to use is realbread [at] sustainweb.org

If you only run Real Bread classes every now and then, or want to promote a particular Real Bread class/course, please add the details to our events calendar instead.

To amend an existing listing

If you have a listing here already that you need to amend, please send the new version in the format described above and we'll update when we can.

NB - Please see our new listing requirement in the quid pro dough section below.

Quid pro dough

Due to funding issues, we've had to review our priorities and some things had to give.

Having received nothing for running this service for more than four years, we are now limiting new entries (and amendments) to baking schools that can offer discounts to Campaign members and/or include the option of Campaign membership to people who take classes.

Your discount scheme

  • We ask that you offer at least 10% off your standard rate for an individual Campaign member.
  • An alternative option is when a Campaign member books and pays for two places (i.e. brings a friend) in the same class, he/she gets a 15% discount off the total booking.
  • You can choose to add your own Ts & Cs, e.g. limit this to people paying in full in advance.

The two methods we suggest for ensuring the discounts are limited to Campaign members are that they quote their membership number when they book, or we can publish your discount code in the password-protected members-only section of our website.

Recruitment

Something that has proved invaluable to us is baking schools signing new Campaign members up when they book and pay for a class. This can be done in two ways:

1

  • You promote (e.g. on your website, leaflets etc.) the fact that for each place booked in any/all/selected (your choice) classes/courses, you will make a donation of £25 to the Campaign. How you build this amount into your pricing/business plan is up to you.
  • You give customers in eligible classes/courses the option of joining the Campaign at no extra cost when they book.

2

  • You give your customers the option of joining the Campaign when they book a class/course.
  • You collect £25 for each person who does.

In either case, you make regular (e.g. weekly or fortnightly) returns to the Campaign coordinator advising how many donations you are transferring; and the details of people who have chosen to join.

We will advise you of our bank details for electronic transfer of funds and will send you an invoice.

The email address to use is realbread [at] sustainweb.org

If you have any questions, please just ask.

Data protection

Please advise all new members that you will be passing the following information to the Real Bread Campaign, strictly for use in administering their membership:

  • First and last name
  • Postal address (for our quarterly True Loaf magazine)
  • email address (for our monthly enewsletter)
  • Telephone number (used on rare occasions e.g. when email address is incorrect)
