During the day you will learn how to make four doughs: a white dough producing a plain tin and a farmhouse loaf; a brown dough with honey producing a cob and two baguettes; a sweet dough producing Chelsea buns; and finally a sea salt and rosemary focaccia bread. Keeping and using natural leavens to produce your own delicious sourdough bread need not be daunting or even complicated. Mick Saxton bakes a range of sourdough breads in his kitchen for bread-lovers in south-west Sheffield and is keen to pass on his skills and experience to those wanting to use natural leavens in their own home. Working with Mick, students spend an enjoyable day either in a one-to-one class (£85) or as part of a small group of two (£160) or three (£240) people. Alongside experience of baking with natural leavens students also gain an understanding of how leavens can be managed, and recipes developed, to produce bread that suits their tastes.
Classes normally start at 9.15am, with introductions over coffee & toast, and close by 3:30pm (lunch included). Students leave with all the bread they've made, a comprehensive recipe hand-out, and a sample of the bakery's own natural leaven.

Set in peaceful countryside on the edge of the beautiful Tamar Valley just over the Devon/Cornwall border, enjoy a half day course running from around 11am until 3-4pm including a light lunch. Hands-on bread making will include varieties of yeast bread such as sourdough,maybe bagels or focaccia. Basically all tailored to participants particular interests. We will also bake quick breads such as soda bread*, flatbread recipes which will ensure you never buy packet naan again, artisan no knead breads and anything else you would like to learn about. Alternatively it works quite well running the course over two consecutive days for a couple of hours or so at a time, I'm flexible and dough is very happy enjoying a long slow rise overnight in the fridge. The course is available to residents and non-residents, and I can give demonstrations (with audience participation!) in your own home if it's relatively local.
