WIN Real Bread books

The latest True Loaf magazine is out, with the chance to WIN a basketful of new bread books.

The books are...

How to make Sourdough, the third book by Campaign ambassador, and School of Artisan Food tutor, Emmanuel Hadjiandreou. Recipes range from classics to halloumi and mint; with a gluten free chapter that includes chickpea and potato focaccia; and loaves made using khorasan, spelt, einkorn and emmer.  (Ryland, Peters, Small, £20)

A Handful of Flour: Recipes from Shipton Mill, the first book from Campaign supporter Tess Lister, showing you how to choose the best flour for each recipe.  It takes you through the properties of flours from white to wholemeal, including French, Italian and Swiss dark.  Beyond modern wheat, it looks at spelt, emmer, khorasan and rye; and non-cereal flours from buckwheat, through to rice, almond, chestnut and coconut. (Headline, £27)

Another Campaign supporter with a new book is Virtuous Bread founder Jane Mason.  Perfecting Sourdough covers everything from basic step-by-step instructions to troubleshooting tips and advice on equipment and ingredients, promising ‘to give even the most novice baker the confidence to crack sourdough!’ (Apple Press, £15)

After fifty years in the industry, teaching hundreds of professional and amateur baker, Clive Mellum has put pen to paper. My Life In Baking captures just some of of the knowledge and stories gathered in this time by the man who Campaign supporter David Jones of Manna from Devon calls “a walking encyclopaedia of bread.” (Flanko Press, £12.50)

Restoring Heritage Grains invites readers to explore a rich history that has been overshadowed by modern industrial wheat. Author Eli Rogosa also argues that organically grown, diverse wheats may be one the best solutions to feeding the world’s growing population. It includes recipes, practical advice on ancient and heritage wheat husbandry, and wheaty folk tales and mythology. (Chelsea Green, £17)
