Undeclared flour additives

It has come to the Real Bread Campaign’s attention that a UK flour miller is adding fungal amylase to most of its bread flour but not declaring it on their bags or sacks.

The following independent mills have advised the Campaign that their flours do not contain any artificial additives, other than mandatory ‘fortificants’ added as required by provision 4 of the Bread and Flour Regulations 1998:

  • Bacheldre Watermill
  • Doves Farm Foods
  • Fosters Mill
  • Gilchester Organics
  • NR Stoate & Sons

We await responses from several other independent mills we have contacted to advise us whether or not their flours are free of added enzymes and other non-mandatory artificial additives, and invite all other mills to do likewise.
