Miranda Godfrey, GreenCook food waste ambassador
Miranda Godfrey is a member of the GreenCook Ambassadors network of food professionals, coordinated in the UK by Ethical Eats. The Ambassadors have a wealth of knowledge about the industry and how to create more sustainable dishes and help curb food waste. They explore in practice some of the findings of the tools and research developed by the transnational GreenCook project.
Miranda is a Chef Lecturer and course coordinator for the inspirationalInternational Culinary Diploma at Westminster Kingsway College in London.
The International Culinary Diploma is the college's dedicated programme for students from the UK and all over the world. It is a fast-track course to present students with a comprehensive understanding of Culinary Arts and the classical skills required to work in the top professional kitchens of the world.
Culinary students learn in small groups, usually no larger than 12 students per class, with continual assessment to provide evidence of culinary expertise in all aspects of kitchen skills undertaken within the teaching kitchen. Westminster Kingsway College's has superb facilities, including specialist teaching kitchens for butchery, patisserie, baking and food preparation. As well as a wide range of chef skills training, students also complete modules on web design and e-business, helping them to develop their own business.
As part of her involvement with the GreenCook project as a Food Waste Ambassador, Ethical Eats is supporting Miranda in her development of a food waste ambassador programme with the students at Westminster Kingsway College. The plan is for up to ten first-year students to become “Greener Cooks Student Ambassadors” and lead food waste reduction measures across the college.
