Maria Elia, GreenCook food waste ambassadorMaria Elia is a member of the GreenCook Ambassadors network of food professionals, coordinated in the UK by Ethical Eats. The Ambassadors have a wealth of knowledge about the industry and how to create more sustainable dishes and help curb food waste. They explore in practice some of the findings of the tools and research developed by the transnational GreenCook project.

Maria Elia was born into the restaurant game, inspired by the enthusiasm for good food of her Greek-Cypriot father. She has worked across Europe, was the Executive Chef at the 2 AA Rosettes Whitechapel Gallery, and is now working on various exciting projects, including consultancy work and developing plans for her own restaurant.

She published The Modern Vegetarian in April 2009, Full of Flavour in 2011 and is currently working on a third book due out in October 2013.

Maria also appears regularly on a variety of cooking programmes, and has been a regular contributor to Market Kitchen andPerfect. She writes for RedDeliciousBBC Good FoodOlive, Waitrose and Sainsbury’s magazines.

Maria teaches at Divertimenti cooking school, consults with various ethical food companies and runs inspirational workshops. She is also supporting the Meat Free Monday campaign on their schools project to help encourage children to enjoy a diverse and balanced diet, including less meat and lots of delicious vegetables!
