Eibhear Coyle, GreenCook food waste ambassador
Eibhear Coyle is a member of the GreenCook Ambassadors network of food professionals, coordinated in the UK by Ethical Eats. The Ambassadors have a wealth of knowledge about the industry and how to create more sustainable dishes and help curb food waste. They explore in practice some of the findings of the tools and research developed by the transnational GreenCook project.
Eibhear Coyle is the Executive Chef and Director of Catering at the four-starLancaster London hotel, which overlooks Hyde Park.
With the support of other senior members of staff, Eibhear is responsible for all food production, plus food and beverage service activities throughout the hotel.
Prior to Lancaster London, Eibhear spent six years working as the Executive Chef for Resort Operations at Kerzner International Atlantis Paradise Island Resort in the Caribbean. He was responsible for all catering operations in five hotels, totalling over 50 outlets, 3,600 guest rooms, and two large conference spaces. He was also premier Sous Chef at London's top hotel The Savoy for four years.
Lancaster London is a popular London location for large conferences and events, with the second largest capacity in London for conference and banqueting. As well as its Nine Kings and Westbourne Suites, the hotel also has twelve ultra-modern meeting, conference and syndicated spaces. The hotel has high quality restaurants including the NIPA Thai restaurant (with a 2 AA rosette) and the Island Bar & Grill ( with a 2 AA rosette and also an impressive three-starSustainable Restaurant Association rating).
