Tristram Stuart, GreenCook food waste ambassadorTristram Stuart is a member of the GreenCook Ambassadors network of food professionals, coordinated in the UK by Ethical Eats. The Ambassadors have a wealth of knowledge about the industry and how to create more sustainable dishes and help curb food waste. They explore in practice some of the findings of the tools and research developed by the transnational GreenCook project.

Tristram has brought the food waste issue to the attention of the public, media and policy-makers across Europe.

He is the founder of Feeding the 5,000 and author of the shocking and inspirational book: ‘Waste: Uncovering the global food scandal’.

He has been involved in the food waste issue since he looked after pigs as a teenager and saw the incredible waste of good food from local shops.

Tristram's team of food waste experts put on events such as Feeding the 5,000 in London's Trafalgar Square, feeding over 5,500 people on waste food. As the campaign goes global, in Paris they fed 6,400 people in one day. Tristram also started 'A Taste of Freedom', which is a food waste initiative which aims is to educate through delicious fruit based treats that would otherwise have gone to waste. Tristram is also a leading light in trying to change food waste policy in the UK and Europe.

Currently, Tristram is working with chef and campaigner Thomasina Miers on The Pig Idea. For thousands of years, pigs have been mankind’s perfect partner: they consume waste and convert it back into food, i.e. pork. Following the outbreak of Foot and Mouth diease in the UK in the early 2000s, and its devastating consequences on British farming, the government introduced a ban on feeding catering waste to pigs. However, science has now shown that cooking leftover food renders it safe for pigs. So Thomasina and Tristram are leading the call for lifting this unnecessary, unscientific, and environmentally destructive law.
