Teacher's notes
- Guidelines to make the kitchen a
safe place should include:
- Children should always be accompanied
by an adult when working in the kitchen and should know
basic first aid.
- Sharp knives and other kitchen utensils
- children should be shown how to use them safely (blades
to face downwards, cut onto a clean, firm surface, fingers
to be kept out of the way).
- Ovens and cookers - children need
to recognise the dangers from burning and scalding and know
to use oven gloves.
- Hot liquids and objects - children
should know not to attempt to carry hot liquids.
- Electricity and wet hands - children
need to know that they should always dry their hands before
touching an electrical switch in order to avoid electrocution.
- Cleaning materials - chemicals in
cleaning products can be dangerous. They should be kept
out of reach of young children.
- Wet floors - they need to know that
wet floors can cause people to slip and hurt themsleves
and that spills should be wiped up immediately.
- Food safety and hygiene - children
need to be taught about the importance of hygienic food
preparation procedures;
- Buying food - check that perishable
food has not started to decay, ensure that tins and packaged
foods are not damaged. Check 'use by' and 'best before'
dates. Make sure that any foods that were stored in the
fridge or freezer cabinets in the shop are not left out
in the warm for more than 90 minutes after buying them.
- Keep the kitchen clean - make sure
that all work surfaces, utensils, towels and clothes
are kept clean. Keep rubbish bins covered and keep pets
out of the kitchen.
- Personal hygiene - wash your hands,
don't cough or sneeze over food, cover any cuts and sores.
- Preparing food - wash cutting boards
and utensils before using them for different foods, don't
let raw food come into contact with cooked food.
- Cooking food - cook food thoroughly,
eat immediately or cool rapidly and cover, dont refrigerate
food until it is cool, don't reheat cooked foods more than
once and make sure reheated food is heated through thoroughly.

Ask the children to identify some of the risks that exist in the
kitchen and tell them to write a series of guidelines that can be
used to help make the kitchen a safe place.
Design a poster or game explaining the rules of food hygiene.
Show the children safe ways to use kitchen utensils and give them
the opportunity to practice these methods. Tell them to write or
draw a list of instructions showing the safe way to;
- chop an onion
- grate a carrot
- open a can of peaches.
Ask the children to use the safe procedures information to explain
what should be done in these situations;
- Demet is making a carrot cake and has accidentally dropped
a plate of washed carrots.
Some fall straight into her rubbish bin (which has a broken lid),
others fall onto the floor.
What should she do?
- Sadiq has bought some ice cream and fish fingers. On his way
home from the shop, his friends ask him to stop and play football
with them. What should he do?
- Eva cuts her hand on the lid of a can whilst she is making a
fruit salad. What should she do?
- Joel has cut up some raw chicken portions and put them into
a baking dish. He now needs to cut up some pieces of fruit for
a salad. What should he do?
